SPINACH LUNCH

So I’m in the grocery store in the fresh foods section, and what do I happen to find? Bagged spinach! So I snatched that up and just HAD to make use of it.

And here’s what I came up with:

Strawberry-mandarin spinach in a white wine vinaigrette. Delicious.

And also, for some added protein (my roommates tend to be hungry), beans in a creamy sauce with fresh thyme on a bed of rice. The beans were just a result of whatever we had at home, threw it into a pot and made it work.

Turns out, my roommates (native Latvians), had NEVER had spinach before! Imagine?! One of them commented “It’s actually pretty good, I had always wondered what spinach tasted like. I thought it would be terrible”.

So there you go. A learning experience for both me and my roommates. This challenge thing is going to be fun! (And don’t forget tasty)
