What could be more North American than macaroni and cheese? It was clear, that the latvians had to be exposed to this fantastic comfort food. And so my friend Imanta and I embarked on the journey of preparing this lovely meal. Although our goal was to make mac and cheese, this dish turned out to be more like mac and alfredo sauce…not complaining though. It was creamy deliciousness.
We started out with macaroni shells, cooked cubes of chicken, and broccoli. And lots of shredded cheese. Latvia doesn’t have cheddar (at least not orange cheddar), so I found the strongest white cheese I could. We made a roux with butter and flour, and kept adding heavy cream. Then followed salt, pepper, crushed garlic, and then all of the cheese. Put it together with the rest of the ingredients, and voila! A fantastically creamy and cheesy version of the traditional mac and cheese!
I found this recipe to be a bit heavy, although all of my taste testers had no objections. There are so many varieties of mac and cheese, this is only the beginning, and I’m so excited to try more! I’ll definitely keep you posted.
