KALE, BLUE CHEESE, CARAMELIZED PEAR SALAD

The perfect salad to have when a girlfriend comes over. The rich flavours come together in a beautiful guilt-free (ok, almost) salad.

Salad Ingredients:

1 pear
1 head of lettuce
1 handful of chopped kale
2 tbsp brown sugar
1 handful of walnuts
A wedge of blue cheese

Dressing ingredients:

2 tbsp Extra-virgin olive oil
2 tbsp Apple cider vinegar
1 tsp Honey
Pinch of salt

So you take your leafy greens and spread them all across a platter. Halve your pears down the middle, then slice them into about 1 cm thick slices. Put them on a pan with the brown sugar, and let them hang out on a low heat setting. Cook them together until the sugar is entirely melted and the pears are softening and completely covered in the gooey sugar.

Spread the pear mixture evenly over the leafy greens. Crumble the blue cheese over the pears, and top with walnuts.

In a sparate bowl whisk together the dressing. Drizzle on top of the whole salad.

And voila! The perfect pseudo-healthy yet oh-so-satisfying meal for a wine evening with the ladies!
